Cool Season Vegetables

Cool season vegetables are generally root crops or salad greens. They can often be planted in two seasons—early spring and in the early fall after temperatures cool. These vegetables thrive best under cool conditions when there is an average daily temperature of 70 degrees or less.

Based on the temperature that the plants will withstand, vegetables are hardy, semi-hardy, tender, or very tender. Hardy types may be planted before the last killing frost. The semi-hardy ones will be injured by a hard frost, but will grow in cool weather and not be harmed by a light frost. Tender plants are injured or may be killed by a light frost but can withstand cool weather, while the very tender are injured by cool weather.

The period of production of cool season vegetables may be extended by the use of either hoop houses or row covers. Vegetables such as lettuce and radishes may also be planted at weekly intervals in the spring in order to spread out the time of harvest
